Lounges and rooftops: an evening service without mistakes

Published

At night, a lounge or rooftop does not run like a daytime café. The lights are low, music drowns out voices, and guests stay for hours, ordering in small waves. Mistakes rarely come from a lack of effort, but from an organisation designed for the day.

What changes at night

In dim light, a waiter easily mixes up two neighbouring tables. With music playing, an order shouted across the terrace arrives half heard. Guests change seats, push tables together and leave in groups. And because they stay for hours, one table often orders four or five times.

Every small mistake multiplies over the evening: a forgotten drink, a table served twice, a bill that no longer matches anyone.

Clear zones and visible numbers

Split the room and terrace into zones and give each waiter their tables for the night. Post the plan at the bar. A waiter who wants to swap a table tells the manager rather than deciding alone.

Table numbers must stay readable in the dark: a small lit plate, a light number on a dark background, or a number on the table edge facing the aisle. If guests push two tables together, note which one carries the bill.

Taking orders over the noise

The waiter leans in, listens, then reads the order back before leaving. It is the simplest way to avoid misunderstandings. Write everything down, even a single drink: memory does not last through a five-hour evening.

Do not make guests wave their arms to get attention. A waiter who walks through their zone regularly, without waiting to be called, makes the night calmer for everyone.

The bar, heart of the evening

At night, most orders go through the bar: juices, mocktails, tea, coffee. Each order should reach the bartender with the table number and clear drink names, on a ticket or a screen, never by voice alone.

A finished drink left waiting on the counter goes warm or cold. Set a fixed spot where the bartender puts what is ready, and a simple signal so the zone's waiter comes to collect it.

End of the night: bills and the till

Groups often leave all at once. Bring the bill before the last wave of departures, and never let a table get up without checking it has paid. At closing, count the cash and compare it with the night's sales: a difference is much easier to explain that same night than three days later.

Ramadan, summer and match nights

During Ramadan, evenings start after ftour and can run until shour. Plan your team in two shifts and adapt your menu to what people want late at night. In summer, the terrace stays full until late: think about wind, tablecloths blowing away and lighting on the stairs.

On big match nights, decide prices and any minimum per table in advance, and tell guests clearly as soon as they arrive.

The ten-minute briefing before opening

Before each evening, gather the team for ten minutes: everyone's zones, bookings and large tables, dishes or drinks that have run out, closing time, and who to call if something goes wrong. This small habit prevents half the night's mistakes.

With Tablilo

Tablilo has a dark Soirée look made for lounges, rooftops and Ramadan nights. Each waiter picks their tables for the day on their phone, and calls from those tables (water, the bill, the waiter) ring on their phone. Drinks go straight to the bar screen.

A table closed without payment alerts the owner's phone at once, and counting the cash at the end of service shows the cash difference. The start of the business day can be set late for nights that run until shour, and Match mode applies match prices until the next day. Try it free.
