How to handle staff tips without arguments

Published

A tip is often a small amount per table, but it is a sensitive topic in any team. When the rule is vague, suspicion grows fast and the mood turns sour. Here is how to set a clear rule, write it down and keep to it, whether guests leave a few dirhams or more.

Why tips cause tension

Arguments rarely come from the amount. They come from questions nobody has answered: who gets the tip from a table served by two people? Who keeps the shared box? A tip added on the card, who gets it and when? What does the cook who held the kitchen together during the rush get?

As long as these questions are settled case by case, everyone has their own version. The terrace waiter thinks he deserves more, the barman feels forgotten, and the owner ends up refereeing arguments a written rule would have prevented.

Pick a model and write it down

There are three main ways to do it. Individual tips: each waiter keeps what their tables leave. Simple and motivating, but it can cause fights over zones and leave out the bar and kitchen. Pooled tips: everything goes into one box, split at the end of the day or week by a fixed key. Fairer to the team, but less motivating for your busiest waiter.

The third is mixed: waiters keep most of their own tips and a fixed share goes into a pot for the bar and kitchen. No model is right everywhere. What matters is that you choose, write it on a sheet of paper and have everyone read it, new staff included.

Cash and card: one rule for both

Cash tips are clear: the guest leaves them, the waiter picks them up. Tips added on the card terminal go through the till, and that is where misunderstandings start. Record them at the moment of payment, with the waiter's name, and decide when they are paid out: in cash the same evening, or on a fixed date.

Do not leave card tips "pending" for days with no written record. To your team, a tip that is not written down is a tip that is lost, even if you fully intend to pay it.

Count in front of the team, at a fixed time

Transparency prevents more arguments than any rule. If tips are pooled, count the box at the same time every day, in front of at least two people, and write down the total. If tips are individual, everyone should be able to see what they received that day, card tips included.

Post the split rule in the staff room or next to the rota. When a waiter has a question, they should find the answer without having to ask you.

Tricky cases to settle in advance

Shift changes: a table served by the morning waiter and paid with the evening one. Decide once, for example that the tip goes to whoever takes the payment, and do not reopen it. A waiter who leaves: settle their share on their last day, with a written record.

Match nights and Ramadan evenings bring extra hands, sometimes for one night only. Tell them before service how they are included. A rule announced in advance causes no argument; a rule discovered at midnight always does.

What to avoid

Do not take money from tips to cover breakages, till errors or lateness. It is the fastest way to destroy trust. Do not push waiters to ask for tips either: guests give when they are happy, and pressure rarely brings them back.

Finally, do not change the rule halfway through a month. If it needs to change, announce it and apply it from a clear date.

With Tablilo

Tablilo can make the rule visible to everyone. On the bill, guests see optional tip buttons with amounts you set, along with the waiter's name, for example "Served today by Karim". Tips show per waiter on their "My service" page and in reports, with a tip column in the payments export.

It does not impose any model: you decide how tips are shared, and Tablilo gives you the numbers to do it without debate. Free trial at /signup.
